The peach is a stone fruit that is delicious and typical of this time of the year. But in addition to being delicious, it provides healthy benefits to our organism. It is an ally for our skin as it helps the formation of collagen. Helps reduce the risk of cardiovascular diseases.
Its pulp is used for the treatment of dry skin.
Tenderloin with peach sauce
Ingredients:
500 gr of pork loin in thick medallions
4 peaches
1 onion
2 cloves garlic
1 glass of port
1 lemon
Salt
Brown sugar
Water
Extra virgin olive oil
Elaboration:
Season the loin with salt and pepper to taste and brown it a little in a frying pan with extra virgin olive oil.
In another frying pan or casserole, cook the onion cut into julienne strips with the two cloves of garlic, when they begin to brown add a glass of port and let it reduce a little. Add ½ liter of water and add the meat as well. Let it cook for about half an hour, turning the meat every ten minutes or so.
In a blender glass put the four peeled and pitted peaches, the lemon juice and a tablespoon of brown sugar. Blend until a fine sauce is obtained.
Remove the meat from the pan and add the peach sauce, stirring well so that it is well integrated. Cook for about four minutes and remove from heat.
Now we serve as we like, we have put some peach segments on top of the meat and we have added the sauce.
