Eco Recipe: Swiss roll with apricot jam

Because no one is bitter for a sweet, we can also indulge in a delicious treat like this one from time to time.

    Apricots are heart-healthy because they reduce hypertension and cardiovascular disease thanks to antioxidants such as vitamin C and lycopene. They are healthy for the bones. And because of their vitamin A content, they contribute to healthy skin and hair.

Swiss Roll with Apricot Jam

Ingredients:

For the jam:

1Kg of apricots

500gr sugar

Juice of ½ lemon

For the roll:

6 medium eggs

100gr sugar

120gr flour

A pinch of baking soda

Salt

3 tablespoons of warm water

3 tablespoons extra virgin olive oil

200gr of the apricot jam we have prepared

Preparation of the jam..:

Peel and pit the apricots, put them in a casserole with the sugar and lemon juice. Allow to macerate for 1 hour. After this time, put the casserole over medium heat and cook for about forty minutes, stirring from time to time. Let it cool and the jam is ready.

Elaboration of the roll:

Sift the flour, baking soda and salt into a bowl.

In a separate bowl, beat the eggs with the whisk so that they take air and mix with the sugar, add the three tablespoons of warm water. Gradually incorporate the sifted flour beating with the help of a mixer, add the tablespoons of extra virgin olive oil.
