The peach is a stone fruit that is in season at this time of the year. In addition to fresh we can eat it with different dishes like this one.
There are many beneficial properties of peaches, but it is worth mentioning that it participates in the production of collagen, which makes it a great ally for our skin, helping it to stay young, but it is also an important source of antioxidants such as beta-carotene and vitamins A, C and E, which also improve and nourish our skin.
Roasted peach with ice cream
Ingredients:
4 peaches
1dl. From sweet sherry
1 Greek yogurt
50gr powdered sugar
200gr cheese spread
½ lemon
1 teaspoon of baking soda
Water
Elaboration:
Peel the peaches and cut them in halves, discarding the stone. Place them in a baking dish lined with parchment paper. Sprinkle with the sweet sherry and bake for 20 minutes in a preheated oven at 180º. Remove from the oven and set aside.
In a saucepan put the powdered sugar with 1.5 dl of water and the juice of half a lemon and heat until it starts to boil. Remove from heat and add a teaspoon of baking soda. When it has cooled, put it in a blender and add the Greek yogurt and 200g of cheese spread, blend well to obtain a homogeneous mixture. Place in the freezer for about 3 hours, stirring every 30 minutes to prevent ice crystals from forming.
Once the ice cream is ready, assemble the dish with the peach halves, adding a scoop of ice cream on each half. We can decorate with some mint leaves or fresh mint.
