Eco Recipe: Cherry Pierogi

Cherry Pierogi

Ingredients:

250gr flour

2 eggs

500gr of pitted cherries 

1 teaspoon cornstarch

Sugar

Salt

Elaboration:

We put the flour in the form of a volcano on a base to work and make a hole in the center. Add the beaten eggs to the egg and work the dough until it is completely smooth and free of lumps, and set aside.

Chop the cherries and add the cornstarch and a tablespoon of sugar. Mix well so that everything is well integrated.

Make small balls with the reserved dough and roll them out with a rolling pin to form thin circles to be filled with the cherry mixture, placing a portion in the center of each circle.

Moisten the edges of the dough with water, fold and close well, giving it a half-moon shape. Let stand for about 20 minutes.

We put a pot with water and when it boils we add a pinch of salt and a spoonful of sugar, we cook the pierogis about four minutes, we let them temper and we serve them warm.
