With stone fruits in full season we can have dishes as delicious as this one.
Cheesecake with nectarine topping
Ingredients:
6 nectarines
5 eggs
200gr sugar
85gr flour
140gr cottage cheese
250ml milk
One teaspoon of vanilla essence
Butter to grease the mold
Powdered sugar
Elaboration:
Put the eggs, sugar, flour, cottage cheese, milk and vanilla essence in a bowl. With a whisk, beat until the dough is homogeneous and without lumps. Add the dough to a buttered springform pan.
Let it rest at room temperature for about 30 minutes.
Peel the nectarines and cut them into thin slices, add them on top of the dough that has already rested.
Bake 45 minutes at 180 degrees with heat up and down.
Remove from the oven and sprinkle with powdered sugar.
If we want we can give it more heat in the oven to caramelize the sugar, but this time only heat it up and at 150 degrees for about five minutes.
